Ingredients:
1/2 green olives, slit into halves
5 tbsp extra virgin olive oil
2 onions, minced
4 cloves garlic, chopped
1 tsp salt
1 tsp pepper,
1 tsp paprika,
1 tsp ginger, ground
1/2 tsp turmeric
2 tbsp lemon juice
3 - 4 cups water
1 lemon, thinly sliced
Method:
Heat 3 tbsp oil is saucepan over medium heat.
Sauté chicken until light brown, turning several times.
Remove and keep hot.
Add remaining oil to pan and sauté onions over medium heat for 6 - 8 minutes and stir in garlic, salt, pepper, paprika, ginger, turmeric, lemon juice and the water.
Add chicken and bring to a boil over high heat.
Turn heat to low, cover and simmer for 1 - 1 and 1/2 hours or until chicken is well done. Add water if necessary. Add olives and simmer for five minutes.
Transfer to plates garnish with lemon slices and serve.
